Taco Egg Muffins – These Will Rock Any Brunch

This is a dish that I would always make the morning after Taco Night, it’s cheesy but we still do Taco Tuesday. I know I’m not alone – right? OK back on topic, I also crave this dish after a night of too many cocktails. What better way to use up the taco beef than mixing it with eggs, cheese and make an omelette. I think I actually enjoyed the taco egg muffins more than I do the Taco’s. Especially if there was some left over guacamole and sour cream. Mouth is watering just thinking about these little gems packed full of flavor.

I am feeling confident that if you like eggs and taco beef, you are going to want to add this recipe to your recipe cards for regular revisiting. Let’s not forget that this dish is kid approved!

With a few modifications I was able to make it keto, however the recipe is dairy free, so if you enjoy dairy on the diet, you might choose to swap the coconut cream for heavy cream and throw in some cheese as a nice finishing touch. If you are like me and like heat, you can either put jalapeno peppers right in the dish or add pickled jalapeno as a garnish beside a heaping spoonful of guacamole.

These are such a versatile dish. You can whip this up at home and your spouse and kids will all gather around the kitchen table to enjoy but you can also bring these to friends house for a brunch or two bite treats for game night or super bowl. You really can’t go wrong with these and they freeze well.

The recipe below makes 6 servings but this recipe will not last long if you are serving it for breakfast to a hungry spouse and children and its perfect for bringing as an appetizer or dish to friends for a social gathering and if it is just you, these freeze really well and are perfect to grab and go as you dash on the road for the day. I have to say, I think they are also delicious cold!

Servings: Makes 18 Muffins, (3 mini muffins per serving)

  • 12 organic whole eggs
  • 6 oz organic ground beef, weighed raw (if you want more protein, add in more beef)
  • Taco Spice Blend
    • 1/2 tsp garlic powder
    • Keto Taco Egg Bites1/2 tsp onion powder
    • 1/2 tsp chili powder
    • 1/4 tsp oregano
    • 1 tsp paprika
    • 1 tsp cumin
    • 1/4 tsp salt
    • 1/4 tsp black pepper
  • 1/4 Cup Coconut Cream
  • Medium Red Bell Pepper diced
  • 1 small onion diced finely

Guacamole:

  • 1 avocado smashed
  • 1 small lime, squeezed
  • 1 stem cilantro chopped roughly
  • 1 oz red onion diced finely
  • 2 grape tomatoes diced finely
  • salt & pepper to taste
  • 1/4 tsp ground Jalapeno spice

Recipe Instructions:

Taco Muffins:

  1. Heat oven to 350 degree F.
  2. In a medium-sized pan, heat on medium heat and add in beef and cook until meat is cooked all the way through
  3. While meat is cooking, mix together taco spice blend, add the spices to the beef and
  4.  mix well
  5. Take beef off burner and let cool to a room temperature before add to the egg mixture
  6. In a large bowl, add eggs, coconut cream and beat or whisk until mixed well
  7. Add the room temperature beef mixture, red pepper and onion to the eggs and stir
  8. Seperate muffins into greased mini muffin tins, recipe should make 18 muffins, but you can also fill into 6-8 large muffins – bake for 25 minutes until center of muffins are cooked
  9. Remove and let cool before you remove them from the pan

Guacamole:

  1. Mix all ingredients together, salt & pepper to taste & serve beside muffins

How to Serve Them:

I know in my household, these little guys get popped in mouths in one bite, versus the intent of them being two bite muffins, but I can’t blame them as we love taco anything here. But if you want to serve them up as a dish, I recommend serving alongside with them all the ingredients you would for traditional taco’s, more specifically:

  • Jalapenos
  • Chopped Cilantro
  • Salsa
  • Guacamole
  • Sour Cream
  • Cheese
  • and/or any other ingredients that you serve with your taco’s!
